This is Carl's pre-marathon meal. It is fun to make with children.

Ingredients
13 inchparchment papersquare, folded into a triangle
1chicken breastboneless, sliced into strips
1clovegarlicminced
1TBLolive oil
1tspbalsamic vinegar
½cupcarrots, zucchini, sweet potato, bell pepper, onion1/2 cup total, sliced thin
5eachkalamata olivescut in half
Instructions
Preheat oven to 350 degrees. Fold the parchment paper into a triangle, crease and open.
Arrange sliced chicken breast in center of parchment paper along with garlic, olive oil, balsamic vinegar, veggies, and olives. Refold parchment into triangle.
Starting at one corner, turn over 1/2 inch edge of parchment and crease. Continue to fold along the edge to make an enclosed pocket. Place on baking sheet and bake in oven at 350 degrees for 25 minutes or until the chicken is done.
