This easy to make recipe with excellent flavor was provided by Sue Cravillion
Ingredients
1canblack-eyed peas with jalapenodrained
1canpinto beans with jalapenodrained
smalljarchopped pimentodrained
1canshoe-peg corndrained (regular corn works as well)
1smallonionchopped finely
1cupceleryfinely chopped
1cupsweet red pepperfinely chopped
Sauce
¼cupcider vinegar
1cupsugar
¼cupvegetable oil
1TBLwater
1tspsalt
1tsppepper
Instructions
Combine the beans and vegetables and set aside. Combine all of the sauce ingredients and bring to a boil. Allow to cool and then pour over bean mixture and stir.
Chill for one hour or more and serve with dipping chips.
